What is Primitivo Rosato?

Even the name Primitivo has it all. In recent years, the classic red Primitivo has risen to the top of the popularity scale. A great achievement, because 20 years ago no one was crowing about this wine from Apulia.

What many people don’t know: This grape variety was only rediscovered at the beginning of this millennium in Apulia, on the heel of Italy’s boot. This is also where the most important Primitivo growing zone in the Apulia region (Italian: Puglia) is located.

The taste of Primitivo is similar to Californian Zinfandel. Today it is assumed that Zinfandel originated from the Primitivo grape. Zinfandel has been available in rosé for many years and in Apulia it is now finally also being made into rosato.

What does Rosato actually mean? Rosato is Italian and means something like rosé, rosy or pink.

For a long time, the upmarket wine world treated rosé a little neglected. But those days are over! Rosato, blush and pink are on everyone’s lips and in everyone’s glasses in summer. The fruity, fresh taste and bright color make Primitvo Rosato so unique. With an alcohol content of approx. 12%, the wine is a wonderful aperitif, a special accompaniment to Italian summer dishes and lovely balmy summer evenings.

How is rosato made?

The red Primitivo grapes are gently pressed and left to stand for a few hours. During this process, the red color pigments are easily released from the skins and give the grape juice its beautiful pink hue with wonderful copper-colored reflections. The juice is then treated like a white wine, i.e. clarified and brought to alcoholic fermentation by adding yeast.

This is how Primitivo Rosato tastes best

Our Primitivo Rosato tastes like a fruit basket of raspberries, strawberry jam and redcurrants. Its bouquet unfolds best at a drinking temperature of 10-12°C.

Serve the bright rosé in white wine glasses. If you prefer something a little more unusual, serve the wine in red wine glasses and “plop” ice cubes with frozen flowers or raspberries into them. This cools and looks particularly pretty.

Rosato tonic spritzer

The Rosato tonic spritzer is a hit when it comes to summer drinks. Simply mix Primtivo Rosato and tonic water in equal parts and then serve on crushed ice. Serve the glasses with mint leaves and lime or lemon wedges as desired.

In summer, rosato goes well with these dishes:

  • pink fried scampi
  • Spaghetti al limone
  • Fried green asparagus tips with risotto
  • Antipasti like bruschetta
  • Carpaccio
