Mozzarella sticks – recipe with a crispy crust

Making mozzarella sticks at home is very easy. The crispy, melt-in-the-mouth sticks are delicious with a salad or for dipping. Fast food in Italian style. Especially cool for kids.

Schritt für Schritt durch´s Rezept

  1. Step 1
    For the breading, mix the eggs with the milk.
  2. Step 2
    In a shallow bowl or deep dish, mix the polenta with the salt, chili, Parmesan and parsley.
  3. Step 3
    Now cut the mozzarella into sticks, i.e. long strips 1 cm thick. Pat the sticks dry with a clean kitchen towel or kitchen paper.
  4. Step 4
    Now turn the sticks – as you would bread a schnitzel – first in the egg, then in the breadcrumbs until they are completely covered in breadcrumbs.
  5. Step 5
    Heat the frying oil in a small pan. Hold a wooden stick in the oil. If bubbles form on it, the temperature is correct.
  6. Step 6
    Bake the sticks in batches until they are golden brown.

The mozzarella does it

When you think of mozzarella, you think of Italy. The spherical white balls are one of the great flagships of Italian cheese culture.

Mozzarella plays a major role in Italian cuisine. Just think of dishes such as caprese, melanzane alla parmigiana or pizza.

Here in Germany, mozzarella also plays a culinary role as a mozzarella stick. Mozzarella sticks are not actually an Italian tradition, but an invention of American fast food chains. But they are delicious too!

How to make the mozzarella sticks crispy

For this recipe, we have made the American mozzarella sticks a little more Italian. Instead of breadcrumbs, we have used polenta for the crispy crust. It works really well!

If you have a lot of time, here’s another tip: bread the sticks and put them in the freezer for a few hours. When the frozen mozzarella sticks then go into the hot fat, they will be crispy and soft and less likely to run out.
