Salsiccia: The ingeniously spicy sausage from Italy is a culinary all-rounder. Here's what you can do with salsiccia in the kitchen.

What is salsiccia?
Salsiccia is a sausage made from coarse minced pork. Depending on the Italian region, other types of meat may also be added.
Its appearance and taste are reminiscent of German sausages. In some macelleria, however, the salsiccia is also rolled thinly and then shaped into a snail.
In the south of Italy, you are more likely to find hot salsicce with chili, while in the north you are more likely to find varieties with herbs, spices or wine.
By the way, salsiccia is pronounced like this: Sallsitscha!
Salsiccia – fresca or air-dried
Salsiccia is sold as a fresh sausage under the name Salsisicca fresca or as an air-dried version. If it is sold as a ring, you will find the name component Salsiccia curva.

In the pan
- It is advisable to prick holes in the sausage with a fork before frying. This allows the fat to fry out, making the sausage crispier and preventing it from bursting.
- Fry the sausage in the pan for 5 to 10 minutes over a medium heat in very little fat until golden brown.
- You can fry the sausage whole, cut it into slices or simply press the sausage meat out of the skin and process it like mince.
Barbecuing on charcoal
- Prick the sausages with a fork, place on the grill and grill over a medium heat for 5 – 10 minutes, turning, until they show golden brown grill marks.
- In summer, grilled salsiccia tastes great with Italian pasta salad, panzanella or simply in a panini.
