The savory cookies traditionally come in the shape of a ring. If they are slightly smaller in size, they are called tarallini. They are made in a similar way to bagels. After kneading and before baking, the curls are first placed in a pan of hot water. Here they are allowed to swim for a while until they rise to the top.
