Pasta alla Norma is a typical Sicilian dish. It is usually prepared with spaghetti, but penne or penne rigate are also used. It is named after the opera Norma by Vincenzo Bellini, but how exactly the name of the opera was transferred to the dish in the 19th century, no one can say for sure today.
The colors of the dish are attributed a symbolic value: On the one hand, the black of the eggplants and the white of the ricotta salata (a Sicilian cheese) stand for the volcano Etna and its snow-covered peak; on the other hand, the Italian tricolor is reflected in the green of the basil, the red of the tomatoes and the white of the ricotta salata.
