Pizza bianca – Italian recipe
Try baking a pizza without tomato sauce! You don't think that's possible? Then definitely try this recipe. It's very simple and absolutely delicious!

What is pizza bianca?
Some of you may have seen it on the menu in a restaurant. And then wondered why it’s called that. This type of pizza is not named after the chef’s wife, Bianca. Rather, it means “white pizza” and refers to the fact that this pizza is prepared without tomato sauce.
However, the exact recipe differs from region to region in Italy. In Rome, a white pizza is a fairly simple flatbread with olive oil, salt and herbs such as oregano and rosemary. You could also translate bianca as “blank” (pizza “without anything”). Elsewhere, bianca refers to the white color of the mozzarella and ricotta with which it is topped.
Schritt für Schritt durch´s Rezept
- Step 1Dissolve the salt in 600 ml water.
- Step 2Mix the sugar and dry yeast in a bowl and stir in about 2 tablespoons of water.
- Step 3Put the flour in a large bowl. Stir the yeast and sugar mixture into the flour. Then gradually add the salt water to the flour and mix either by hand or with a kneading machine.
- Step 4Once the water has been completely incorporated into the flour, add the olive oil and mix everything well again.
- Step 5Remove the dough from the kneading machine and work with your hands for another 10 minutes.
- Step 6As soon as the dough is elastic and no longer sticky, cover and leave to stand at room temperature for 1 hour.
- Step 7Then shape the dough into 8 balls of the same size and cover them again and leave to rise for 6-7 hours.
- Step 8Now shape the dough pieces into evenly round pizzas using either your hands or a rolling pin.
- Step 9Preheat the oven to the highest setting.
- Step 10Cut the mozzarella into strips. Spread the strips of half a mozzarella ball over the pizza, add a few sprigs of rosemary and a dash of olive oil and bake the pizza in the oven until golden brown.
- Step 11Remove the pizza from the oven, top with raw ham and finish with a few drops of olive oil.
