Parmesan tartlets – starter for a festive meal
These pretty Parmesan tartlets will enchant you! You can serve them as a small Italian starter on a menu or enjoy them with a salad for dinner. They are also delicious without the salad, for example as finger food on a buffet.

Schritt für Schritt durch´s Rezept
For the dough
- Step 1Mix the flour, grated Parmesan and salt. Cut the cold butter into small pieces and work into the flour with your fingertips until the mixture has the consistency of breadcrumbs.
- Step 2Whisk the egg, add to the flour mixture and knead in until the dough forms a ball. If the dough is too dry, add one or two teaspoons of water.
- Step 3Wrap the finished dough in a piece of cling film and leave to rest in the fridge for at least 1 hour.
- Step 4Then preheat the oven to 180° C.
- Step 5Roll out the dough to a thickness of about 4 mm on a well-floured work surface. Using a cup or similar. Cut out circles with a slightly larger diameter than the muffin tins. Cut out as many cones as possible, then remove the dough between the circles and roll out and cut out again if necessary.
- Step 6Now press the circles into the tins, prick the base with a fork and bake at 180°C for 10-12 minutes until the pastry is golden brown. Leave the tartlets to cool on a wire rack.
For the filling
- Step 7Mix the well-drained ricotta with the pesto and grated Parmesan.
- Step 8Using a piping bag, pipe the ricotta mixture onto the tartlets and garnish with drops of balsamic. Serve immediately.
