Mediterranean potato salad – with vinegar and oil
Serve your potato salad with an Italian twist. Traditional potato salad alla vinegar and oil becomes a really elegant dish with a young olive oil and white balsamic vinegar. Black olives, basil and pecorino make the taste fresh and spicy. The Mediterranean potato salad is easy and quick to prepare. Give it a try!

- 800 g Potatoes, waxy
- 200 g Black olives, pitted
- 100 g red onions
- 200 g Pecorino
- 30 Leaf Basil
- 1 Confederation Parsley, smooth
- 150 ml Olive oil , extra virgin
- 50 ml Balsamic vinegar bianco
- Sea salt, from the mill
- Pepper, from the mill
Schritt für Schritt durch´s Rezept
- Step 1Boil the potatoes in their skins, rinse, peel and leave to cool.
- Step 2Halve the olives and halve the red onions and cut into fine rings. Finely dice the pecorino cheese.
- Step 3Cut the potatoes into large cubes and place in a large salad bowl.
- Step 4Chop the parsley and finely chop the basil. Add to the bowl with the olives, onions and pecorino.
- Step 5Prepare a salad dressing from the olive oil, white balsamic vinegar, salt and freshly ground pepper and add to the salad. Mix everything together thoroughly. Leave to rest in a cool place before serving.
The dressing: simple and elegant
Potato salad is a typical German dish: in the north of Germany, it is often served with mayonnaise. In the south, on the other hand, potato salad is served dressed with stock, oil, onions and gherkins. But have you ever tried this classic Italian-Mediterranean dish?
Potato salad in Italy often differs regionally and in its preparation from the typical German versions. Instead of heavy mayonnaise, the dressing is usually based on a mixture of extra virgin olive oil, a splash of vinegar or lemon juice.
This gives the salad a refreshing note, which is particularly welcome on warm summer days. Mediterranean herbs such as basil, oregano or rosemary and other fresh ingredients such as tomatoes, olives or capers are also often added.
Mediterranean potato salad with even more kick
If you like, you can refine the salad recipe above a little. Simply sprinkle a handful of roasted pine nuts or sun-dried tomatoes on top when serving.
It is best prepared the evening before and kept fresh in the fridge so that the flavors can fully develop.
The right accompaniment to potato salad
This light, fresh potato salad goes well with other Mediterranean dishes. Serve it with grilled fish and bistecca or with spicy salsiccia from the barbecue. The salad is a great option, especially in the summer months when fresh, light dishes are preferred. Mediterranean potato salad does not require mayonnaise. It is therefore also ideal for picnics or as a side dish at barbecues.
