Gnocchi pasta from Sardinia
Gnocchi are a well-known type of pasta alongside spaghetti, maccheroni, penne & co. However, this almost always refers to gnocchi made from potatoes. In Sardinia, however, a form of gnocchi has developed which, like the other more or less well-known forms, is made from wheat flour. As they are slightly smaller than gnocchi di patate, they are known as gnocchetti. Because of their origin in Sardinia, they are known as gnocchetti sardi. In Sardinia itself, the gnocchetti sardi Malloreddus, which means “little bulls”. The similarity to potato gnocchi lies in the ridges on the curved surface.
In the past, gnocchetti were prepared by pressing the dough into a wicker basket, which in Italian is called ciurili. Today, a special fluted rolling pin is used.
Recipes for gnocchetti sardi
Gnocchetti sardi are practically THE national dish of Sardinia. They are usually served with sauces based on ricotta or meat. For example, there is the dish alla Campidanesi, which is prepared with fennel salsiccia or simple salsicca and fresh wild fennel. Peasant-style gnocchetti (alla contadina) are prepared with smoked pancetta. The gnocchetti with mint pesto and fava beans are also very tasty – according to reports at office lunches. The recipe with salmon and fennel proves that gnocchi pasta can also be enjoyed with fish.
