Bean salad with tuna – Italian recipe
A great salad made from white beans, green beans and tuna. The inspiration comes from Liguria. We love this salad because it is rustic but at the same time something really delicious.

White and green bean salad with tuna and herb vinaigrette. A healthy, quick and delicious recipe.
Schritt für Schritt durch´s Rezept
- Step 1Soak the white beans overnight in plenty of water. The following day, rinse and simmer covered with 1 liter of water, the bay leaf and 2 chopped garlic cloves for approx. 1 1/2 hours. Then drain and leave to cool.
- Step 2Meanwhile, clean the green beans, cut off the ends and cook in plenty of boiling salted water for about 8 minutes until al dente. Then rinse in cold water and drain.
- Step 3Peel and halve the onions and cut into fine rings. Drain the tuna in a sieve and cut into large pieces.
- Step 4For the dressing, mix the vinegar with the sugar, mustard, salt and pepper. Gradually stir in the olive oil with a whisk. Squeeze in the remaining garlic clove.
- Step 5Mix the white and green beans, onions and tuna together.
- Step 6Wash and dice the tomatoes and add to the other ingredients. If desired, add the finely chopped anchovy fillets. Pour over the dressing, sprinkle with the parsley, stir in thoroughly and leave to stand for a while before serving.

Bean salad and other Italian classics with pulses
Believe it or not, bean salad is typically Italian. In Italian cuisine, beans are still an integral part of the repertoire. Beyond pasta and pizza, there are all kinds of delicious recipes that include pulses.
Some of the most popular bean dishes are minestrone, Tuscan bean soup, pasta e fagioli, pasta with green beans and pesto or giant beans with salsiccia.
Popular Italian bean varieties
- Cannelini: Cannellini beans are small, slightly kidney-shaped beans that are dried and therefore have a very long shelf life. They come from Italy and have a creamy white color. When cooked, they have a fluffy texture and a slightly nutty, mild taste. They look appetizing in a bean salad.
- Fagiolini: Fagiolini is the Italian word for green beans, as we also know them in Germany. In Italy, they are often served in salads or mixed with pasta.
- Borlotti: Borlotti beans are particularly popular in northern Italy. The dried bean seeds are eaten. They are speckled with red and white and are particularly pretty to look at. When cooked, they turn brown. They contain a lot of iron and are often served in Italy with short pasta and a light tomato sauce.
