Cook the tortellini in salted water and then rinse with cold water.
Wash the rocket salad and dry well in a salad spinner.
Now cut the sun-dried tomatoes into thin strips and finely dice the mozzarella.
In a large salad bowl, mix the tortellini with the rocket, tomatoes, mozzarella and olives.
For the dressing, mix the olive oil, balsamic vinegar, honey, mustard, salt and pepper in a small bowl with a small whisk until creamy. Then dress the salad with the dressing.
